After a night of intense studying, I passed my Biology test! I’m in the process of finishing off some pre-requisite courses needed for a Masters in Human Nutrition and Functional Medicine…my dream!
When you’re an English teacher and a student, you need to find time for dessert.
Scratch that, everyone deserves some dessert!
So here you go…
Ingredients:
- 3 bananas
- 3 tbsp Carob Powder (I use “Now Foods”)
- 2 tbsp Coconut Oil (You can buy the “Kirkland” brand in bulk at Costco.)
- 1/3 cup Coconut Flour
- 1/4 cup Flaxseed Meal (or ground flaxseeds)
- 1 Egg (Antibiotic-Free)
- 1 tsp Baking Soda
- 1/4 tsp Celtic Sea Salt
Extras:
- 90% dark chocolate
- Nut Butter (I love Barney’s Blanched Almond Butter!)
- Jam (try out my Raspberry Cherry Chia Jam!)
Recipe:
- Blend your bananas and coconut oil in a food processor.
- Pour into a bowl and add your dry ingredients: carob powder, coconut flour, flaxseed meal, baking soda and salt.
- Pop it into your oven and the rest is history. π
- Once cooled, add melted 90% dark chocolate and swirl in your favorite nut butter. Then top with your favorite homemade jam.
Tastes just like a brownie with tons of added fiber from coconut flour, flaxseed and bananas.
